Filling Ingredients<\/strong><\/p>\n\n\n\n Sponge Ingredients<\/strong><\/p>\n\n\n\n Icing Ingredients<\/strong><\/p>\n\n\n\n 1. First thing to do is make the pastry by pouring the flour into a mixing bowl and adding the butter.<\/p><\/div><\/div><\/div> 2. Using your finger tips, rub the butter into the flour to create a crumble-type texture.<\/p><\/div><\/div><\/div> 3. Pour in half of the water and stir together, then add the remaining liquid if you need it.<\/p><\/div><\/div><\/div> 4. Mix together until it forms a ball of dough, then transfer to a worktop lightly dusted with flour and knead together for 20 seconds.<\/p><\/div><\/div><\/div> 5. Place the pastry in the fridge to rest for 20 minutes while you make the filling.<\/p><\/div><\/div><\/div> 6. To make the jam filling, dice the apples in 1\/2cm cubes and place in a pan with the sugar.<\/p><\/div><\/div><\/div> 7. Using a sharp knife, cut the top and the bottom off the grapefruit, then cut the skin off the fruit to reveal the pink flesh of the fruit.<\/p><\/div><\/div><\/div> 8. Hold the peeled grapefruit in your hand and carefully cut on the inside of each segment to release the fruit.<\/p><\/div><\/div><\/div> 9. Cut each segment into small pieces before adding to the pan with the sugar and apples.<\/p><\/div><\/div><\/div> 10. Turn on the cooker to medium heat and bring to a boil, then turn the heat down so the pan is just bubbling gently.<\/p><\/div><\/div><\/div> 11. When the apples are soft and tender, remove from the heat and leave to one side to cool.<\/p><\/div><\/div><\/div> 12. Roll the pastry out and line a 25cm pie dish or tin.<\/p><\/div><\/div><\/div> 13. To make the sponge, simply beat together the butter and sugar in a mixing bowl with an electric whisk.<\/p><\/div><\/div><\/div> 14. When light and fluffy, add the eggs one at a time making sure you mix well in between adding each egg.<\/p><\/div><\/div><\/div> 15. Add the ground nuts and flour and mix together.<\/p><\/div><\/div><\/div> 16. Spoon the Florida Grapefruit and apple mixture onto the bottom of the pastry, then add the sponge.<\/p><\/div><\/div><\/div> 17. Smooth off with a spoon and bake in a pre-heated oven 170c for 30-40 minutes.<\/p><\/div><\/div><\/div> 18. When fully baked, remove from the oven and leave to cool.<\/p><\/div><\/div><\/div> 19.
