Peel grapefruit and oranges, then slice into 1\/2-centimetre thick rounds.Arrange citrus slices, overlapping slightly, in a deep platter.In a skillet, cook sugar over medium heat for about 10 minutes, swirling sugar in skillet when it begins to melt.Continue cooking and swirling until sugar melts completely and becomes a deep amber colour.Remove skillet from heat and drizzle caramelised sugar over fruit.

Serve immediately for a crunchy candy-like topping, or cover and refrigerate until caramelised sugar hardens, about 2 hours, or until ready to serve.
