Salad Ingredients:<\/strong><\/p>\n\n\n\n Coconut Rice Ingredients:<\/strong><\/p>\n\n\n\n Dressing Ingredients:<\/strong><\/p>\n\n\n\n 1. Heat a non-stick skillet with a tablespoon of olive oil. <\/p><\/div><\/div>\n\t<\/div>\n\t 2. Add the shrimp and season with salt and pepper.<\/p><\/div><\/div>\n\t<\/div>\n\t 3. Saute until shrimp turns pink and opaque, approximately 3 minutes per side. Set aside.<\/p><\/div><\/div>\n\t<\/div>\n\t 4. Place the segmented Florida Grapefruit, radicchio, carrots, scallions, mint, basil leaves, and chiles in a large bowl. Save several Florida Grapefruit segments for garnish.<\/p><\/div><\/div>\n\t<\/div>\n\t 5. Add all of the dressing ingredients in a bowl and whisk until fully combined. <\/p><\/div><\/div>\n\t<\/div>\n\t 6. Add half of the dressing to the salad mix and toss lightly, reserving some dressing for serving on the side.<\/p><\/div><\/div>\n\t<\/div>\n\t 7. Rinse rice under cold water.<\/p><\/div><\/div>\n\t<\/div>\n\t 8. Add all coconut rice ingredients to a rice cooker. Cook rice accordingly.<\/p><\/div><\/div>\n\t<\/div>\n\t 9. Top cooked rice with toasted coconut and scallion.<\/p><\/div><\/div>\n\t<\/div>\n\t 10. Divide salad and shrimp amongst six plates on top of a bed of rice.<\/p><\/div><\/div>\n\t<\/div>\n\t 11. Garnish with Florida Grapefruit segments.<\/p><\/div><\/div>\n\t<\/div>\n<\/div>\n<\/body><\/html>\n\n\n\n Helpful Tips:<\/strong><\/p>\n\n\n\n Ingredients Salad Ingredients: Coconut Rice Ingredients: Dressing Ingredients: Preparation Helpful Tips: For added flavour, top each serving with chopped peanuts and toasted coconut and serve with a wedge of lime.
