- 1 Florida Grapefruit
- 1 bunch parsley
- 1 bunch coriander
- 1 bunch fresh oregano
- 1/2 red onion
- 1 clove garlic
- 1 tablespoon wine vinegar
- 1/2 teaspoon paprika
- 1 pinch Espelette pepper
- 150ml olive oil
- Salt and pepper
Instruction
- Preheat your oven to 180°C in traditional heat mode.
- Start by chopping the onion. Mix with olive oil and spread on a baking sheet lined with baking paper. Bake for 15 minutes. The onions should start to color.
- Carefully wash the Florida Grapefruit and remove the zest. Cut in half. Squeeze the juice from one half and peel the other.
- In a blender or mixer, add the herbs, spices, grapefruit juice, roasted onion and garlic. You can leave the herb stems on. Start the blender and add the oil as you go.
- Cut small pieces of Florida Grapefruit and add them to the sauce.
- Finely chop the grapefruit zest and add about a heaped teaspoon.
Tip: Let the sauce stand overnight to fully develop its flavors.
This recipe makes for 200ml of sauce and can be stored for 5 days.
This sauce, traditionally served with red meat, goes wonderfully with white meat, fish, or even a nice plate of raw vegetables.
