Chilled Pasta with Florida Grapefruit and Salmon

Ingredients

  • 1 Florida Grapefruit
  • 140g spaghetti pasta
  • 120g salmon (sushi grade)
  • 3g finely minced garlic
  • 4-5 basil leaves
  • 20g capers
  • 4 tbsp olive oil
  • Salt, black pepper to taste

Instruction

  1. Peel grapefruit and cut into bite-size portions.
  2. Thinly slice salmon and season with salt. Leave for 5 minutes.
  3. In a bowl, add 1 minced garlic, torn basil leaves, capers, 3 tbsp olive oil, and season with salt and black pepper. Mix thoroughly.
  4. Boil large pot of water, adding salt generously (approximately 1% salt to water). Boil pasta roughly 2 minutes longer than time suggested on package, and then chill in ice cold water.
  5. Pat spaghetti until dry, then add to bowl and mix seasoned salmon from Step #2. Add salt, black pepper, and 1 tbsp olive oil to taste.
  6. Arrange on plate for completion.
