Florida Grapefruit and California Prune Breakfast Flapjacks

Ingredients

  • 2 Florida Grapefruit
  • 100g California Prunes (chopped)
  • 250g Vegan/plant-based butter
  • 125g Granulated sugar
  • 125g Brown sugar
  • 6 tbsp Golden syrup
  • 500g Rolled oats
  • 75g Mixed seeds

Preparation

Florida Grapefruit and California Prune Breakfast Flapjacks

1. Place the butter and both sugars into a large pan on a low heat. Once the butter has melted, add in the golden syrup, then turn up the heat and bring to a boil.

2. Add the zest of the Florida Grapefruit and juice.

3. Sprinkle in the oats and chopped California Prunes before stirring together with the seeds, making sure all of the oats are covered.

4. Spoon the oats out onto a baking tray lined with parchment paper. Using the back of a spoon, press the flapjack down so that it is all even. Bake in the oven at 170c for 20 minutes.

5. Once baked, leave the flapjack to cool for 20 minutes before cutting into portions.
