Bhaji Burger with Florida Grapefruit

Ingredients

Topping Ingredients

  • 6 tbsp mango chutney
  • 1/2 Florida Grapefruit
  • A handful of mint, chopped

Burger Ingredients

  • 2 white onions, sliced
  • 1 red onion, sliced
  • 1/2 tsp salt
  • 1 tbsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp curry powder
  • 1 tsp fresh ginger
  • 1 tbsp onion flakes
  • 2 garlic cloves, chopped finely
  • 1 sweet potato, grated
  • 250g halloumi cheese, grated
  • 2 carrots, grated
  • 4 tbsp gram flour
  • 3 tbsp water
  • 1/2 Florida Grapefruit
  • 2 tbsp oil
  • 4 tbsp Greek yogurt
  • 4 burger buns

Instruction

  1. Spoon out the mango chutney into a bowl.
  2. Cut the top and bottom off the grapefruit. Using a sharp knife, carefully remove the outer peel of the fruit.
  3. Cut the segments out of 1/2 of the Florida Grapefruit by making small cuts on the inside of each segment, then chop into smaller pieces before adding the grapefruit to the mango chutney, along with the chopped fresh mint and set to one side while you make the burger mix.
  4. To make the burgers, simply place the sliced onions into a bowl; make sure they are as thin as possible.
  5. Add the salt and squeeze the onions with one hand to help the salt penetrate the onions and soften them.
  6. Add all the spices and chopped garlic.
  7. Grate the sweet potato, carrots, and halloumi cheese; add to the bowl and mix together.
  8. Scatter in the flour and pour over the water.
  9. Finally squeeze the juice out of 1/2 of the Florida Grapefruit on the top of the vegetables and mix together.
  10. Divide the mixture into 4 portions (you can make smaller ones if you prefer)
  11. Drizzle 2 tablespoons of oil into a large non-stick frying pan over a medium-low heat, then place the burgers into the pan, flattening them out into rough rounds, approximately the same size as your buns.
  12. Cook for about 6-7 minutes on each size. Then when golden and crisp, serve in the burger buns with a spoonful of the yogurt mix on the base. Then, add your burger and finally, top with the delicious mango, Florida Grapefruit, and mint chutney. Enjoy!
