Florida Grapefruit Express Tortillas

Ingredients

  • 1 Florida Grapefruit
  • 4 tortillas
  • 1 fresh avocado
  • 2 chicken fillets
  • 100g grated cheddar cheese
  • 150g kidney beans
  • 1 handful of spinach shoots
  • 1 small bunch of fresh coriander
  • Olive oil
  • Salt and pepper

Instruction

  1. Preheat your oven to 190°C.
  2. Start by peeling and cutting the Florida Grapefruit into segments.
  3. Coat chicken fillets with olive oil and add salt and pepper. Put them in the oven for 20 minutes.
  4. Peel and mash the avocado and season with a drizzle of Florida Grapefruit juice, salt, and pepper.
  5. Drain the kidney beans and rinse the spinach shoots.
  6. In a clean pan, heat a drizzle of olive oil over low heat. Cut your tortilla in half and place it in the pan.
  7. On the first quarter, spread a tablespoon of mashed avocado, then add some kidney beans and a few coriander leaves.
  8. On the second quarter, place the roasted chicken pieces and spinach shoots. On the third quarter, add the grated cheddar cheese, and finish on the fourth quarter with the Florida Grapefruit pieces.
  9. Once the cheddar cheese has melted, fold each quarter over the others.

Your tortilla is ready! You can move on to the next ones.
