Gratinated Florida Grapefruit with Mascarpone, Nuts and Pomegranate

Ingredients

  • 2 large Florida Grapefruit
  • 2–4 tsp brown sugar or coconut blossom sugar
  • 1 tsp honey
  • 2 tbsp finely chopped nuts (pistachios, almonds or pecans)
  • 4 tbsp mascarpone
  • 2–3 tbsp pomegranate seeds

Instruction

  1. Preheat the grill (broiler) to 220°C (430°F).
  2. Cut the Florida Grapefruit in half and remove any seeds.
  3. Sprinkle 1–2 teaspoons of brown sugar over each Florida Grapefruit half and optionally drizzle with a little honey.
  4. Place the Florida Grapefruits cut side up on a baking tray and grill for 3–7 minutes, until the sugar melts and lightly caramelizes. Keep a close eye on them, as they can brown quickly.
  5. Let the Florida Grapefruits cool slightly for about 1 minute.
  6. Spoon 1–2 tablespoons of mascarpone onto each Florida Grapefruit half.
  7. Sprinkle with the chopped nuts and add the pomegranate seeds. Serve immediately while the Florida Grapefruit is still slightly warm.
