Florida Grapefruit Cupcakes – Small Batch

Ingredients

Cupcake Ingredients

  • Zest of 1 Florida Grapefruit
  • 55g room temp butter
  • 55g caster sugar
  • 55g self-raising flour
  • 1 egg

Buttercream Ingredients

  • Juice from half of a Florida Grapefruit
  • Florida Grapefruit slices for decoration
  • 125g room temp butter
  • 250g of icing sugar
  • Food colouring (optional)

Instruction

Perfect serving size for you and a few friends or family – makes approximately 4 cupcakes and lots of buttercream for elaborate piping if you fancy it!

  1. Preheat the oven to 160c.
  2. Beat the sugar and butter until fluffy, then add the egg, flour and Florida Grapefruit zest until a batter is formed. If it’s a little thick, add a drop or two of milk.
  3. Divide the mixture into cupcake/muffin cases and bake in the pre-heated oven for 15 – 20 mins. A skewer should come out clean when prodded into the cake. Leave to cool.
  4. Once fully cooled, make the buttercream icing.
  5. Gradually beat the icing sugar into the butter then add the Florida Grapefruit juice and food colouring (optional). Pipe straight away.
  6. Top with more Florida Grapefruit segments, sprinkles, glitter or whatever else you fancy.
