Florida Grapefruit Posset with White Chocolate and Sesame

Ingredients

  • 2 Florida Grapefruit
  • 400ml full-fat cream (40% fat)
  • 100g white baking chocolate
  • 130g sugar
  • 1 tablespoon sesame oil, toasted
  • 1 tablespoon sesame seeds
  • Whipped cream for serving

Instruction

  1. Start by finely removing the zest from a grapefruit, then squeeze it to extract the juice.
  2. In a saucepan, bring the cream and sugar to the boil, stirring constantly, then add the grapefruit juice.
  3. Cut the chocolate into small pieces and add to the cream off the heat. Stir until the chocolate melts.
  4. Add the grapefruit zest and sesame oil.
  5. Pour the mixture into the verrines and chill for at least 2 hours.
  6. Just before serving, peel the second grapefruit and cut into segments. Add a generous dollop of whipped cream on top, then finish with fresh grapefruit and sesame seeds.

Tip: Leave to stand for at least 2 hours before serving.
