Florida Grapefruit Bakewell Tart

Ingredients

  • 250g plain flour
  • 125g butter
  • 2-3 tbsp cold water

Filling Ingredients

  • 3 Florida Grapefruit
  • 2 cooking apples
  • 100g golden caster sugar

Sponge Ingredients

  • 125g butter, softened
  • 125g golden caster sugar
  • 2 large free-range eggs
  • 65g ground almonds or hazelnuts
  • 65g self-raising flour

Icing Ingredients

  • Juice from 1 Florida Grapefruit
  • 100g icing sugar

Instruction

  1. First thing to do is make the pastry by pouring the flour into a mixing bowl and adding the butter.
  2. Using your finger tips, rub the butter into the flour to create a crumble-type texture.
  3. Pour in half of the water and stir together, then add the remaining liquid if you need it.
  4. Mix together until it forms a ball of dough, then transfer to a worktop lightly dusted with flour and knead together for 20 seconds.
  5. Place the pastry in the fridge to rest for 20 minutes while you make the filling.
  6. To make the jam filling, dice the apples in 1/2cm cubes and place in a pan with the sugar.
  7. Using a sharp knife, cut the top and the bottom off the grapefruit, then cut the skin off the fruit to reveal the pink flesh of the fruit.
  8. Hold the peeled grapefruit in your hand and carefully cut on the inside of each segment to release the fruit.
  9. Cut each segment into small pieces before adding to the pan with the sugar and apples.
  10. Turn on the cooker to medium heat and bring to a boil, then turn the heat down so the pan is just bubbling gently.
  11. When the apples are soft and tender, remove from the heat and leave to one side to cool.
  12. Roll the pastry out and line a 25cm pie dish or tin.
  13. To make the sponge, simply beat together the butter and sugar in a mixing bowl with an electric whisk.
  14. When light and fluffy, add the eggs one at a time making sure you mix well in between adding each egg.
  15. Add the ground nuts and flour and mix together.
  16. Spoon the Florida Grapefruit and apple mixture onto the bottom of the pastry, then add the sponge.
  17. Smooth off with a spoon and bake in a pre-heated oven 170c for 30-40 minutes.
  18. When fully baked, remove from the oven and leave to cool.
  19. Finish with an icing glaze by mixing together the icing sugar and Florida Grapefruit juice in a bowl and drizzle over the top of the tart.
